Peppermint Rock Candy

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes
Servings: 3 strings

Ingredients

  • 3 cups granulated sugar plus extra for seeding the strings
  • 1 cup water
  • 1/4 teaspoon peppermint extract optional
  • red and green food coloring optional

Equipment

  • Saucepan
  • 3 clean glass jars
  • Cotton string
  • Wooden skewers or pencils
  • Clothes pegs

Method

  1. Cut three pieces of cotton string a little shorter than your jars. Dip them in water, roll them in sugar and let them dry completely, about an hour. This "seeds" them.
  2. Grown-up job: heat the water in a saucepan, then stir in the sugar a cup at a time until it is completely dissolved and the syrup is clear. Bring to a gentle boil, then take off the heat.
  3. Let the syrup cool for 20 minutes, then stir in the peppermint and pour into the jars. Add a drop of coloring to some jars.
  4. Tie each string to a skewer, rest it across the jar top and lower the string into the syrup without touching the sides or bottom. A clothes peg holds it steady.
  5. Leave the jars somewhere quiet and check daily. After 5 to 7 days, lift the crystals out, let them dry on parchment, and tie ribbons on to hang.

Notes

Boiling sugar syrup is very hot: grown-ups only at the stove. Seeding the string with sugar first helps crystals start. Disturbing the jar slows growth, so pick a quiet spot. If a sugar crust forms on top, gently break it so the syrup can keep evaporating.
