In a medium mixing bowl, add the almond butter. If it's stiff, microwave for 10–15 seconds to loosen. Don't overheat—warm, not hot.
Stir in the maple syrup or honey. Start with 2 tablespoons. You can always add; you can't subtract. Obvious, but crucial.
Add 1/2 cup protein powder and mix with a sturdy spoon or spatula. If the mixture looks too wet, sprinkle in more powder 1 tablespoon at a time. You're aiming for a dough that pulls away from the bowl and doesn't stick to your fingers.
Too dry and crumbly? Add 1 teaspoon almond butter or 1 teaspoon warm water at a time. Too sticky? More protein powder, gradually.
Fold in optional add-ins (chocolate chips, seeds, a pinch of salt). Keep it simple—remember, we're here for speed.
Pop the bowl in the fridge for 10 minutes. This makes rolling easier and keeps your sanity intact.
Scoop 1 tablespoon portions and roll into balls. You should get about 14–18 bites depending on size and mix-ins.
Optional: roll in shredded coconut, cocoa powder, or crushed nuts for a pro look and extra texture.
Place on a parchment-lined tray and refrigerate for 20 minutes to firm up. Then move to storage (see below).
