Ingredients
  

  • Barley flour (not barley malt; look for whole-grain barley flour)
  • Rolled oats (optional, for texture)
  • Baking powder
  • Baking soda
  • Fine sea salt
  • Ground cinnamon
  • Ground nutmeg
  • Carrots, finely shredded
  • Eggs (or flax eggs for vegan)
  • Plain Greek yogurt (or dairy-free yogurt)
  • Maple syrup or honey
  • Brown sugar or coconut sugar (just a little, for depth)
  • Neutral oil (such as avocado or light olive oil)
  • Vanilla extract
  • Raisins or chopped dates
  • Chopped walnuts or pecans (optional but great)
  • Unsweetened shredded coconut (optional)
  • Orange zest (optional, brightens the flavor)
  • Cream cheese and maple syrup (optional, for a quick drizzle)

Method
 

  1. Preheat and prep: Heat your oven to 350°F (175°C). Line a mini muffin tin or a small baking sheet with parchment. Lightly grease to prevent sticking.
  2. Mix the dry ingredients: In a large bowl, whisk 1 1/2 cups barley flour, 1/2 cup rolled oats (optional), 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon fine sea salt, 1 1/2 teaspoons ground cinnamon, and 1/4 teaspoon nutmeg.
  3. Whisk the wet ingredients: In another bowl, whisk 2 large eggs, 1/2 cup plain Greek yogurt, 1/3 cup maple syrup, 2 tablespoons brown or coconut sugar, 1/4 cup neutral oil, and 1 teaspoon vanilla. Stir in 1 teaspoon orange zest if using.
  4. Shred the carrots: Finely grate 1 1/2 cups packed carrots. Squeeze lightly in a paper towel to remove excess moisture. You want them damp, not dripping.
  5. Combine: Pour the wet mixture into the dry bowl. Stir gently until almost combined. Fold in the shredded carrots, 1/3 cup raisins or chopped dates, and 1/4 cup chopped walnuts or coconut if you like. Do not overmix.
  6. Portion: For bite-size, spoon the batter into a mini muffin tin, filling each cup about 3/4 full. You can also scoop heaping tablespoons onto a parchment-lined sheet to make small mounds.
  7. Bake: Bake 12–15 minutes for mini muffins, or 14–16 minutes for small mounds, until the tops spring back and a toothpick comes out with a few moist crumbs. Do not overbake.
  8. Cool: Let them rest in the pan for 5 minutes, then transfer to a rack to cool completely. The texture sets as they cool.
  9. Optional drizzle: Mix 2 ounces softened cream cheese with 1–2 tablespoons maple syrup and a splash of vanilla until smooth. Drizzle lightly over cooled bites. Keep it minimal so they stay snack-friendly.
