Sweeten the yogurt: In a medium bowl, whisk the yogurt with honey or maple syrup until smooth.
Add the pinch of salt and vanilla, if using.
Add citrus aroma: Stir in the grated Buddha’s hand zest and the minced flesh. Start with 1 teaspoon zest, taste, and add more if you want a stronger aroma.
Adjust acidity: If you prefer a brighter tang, whisk in 1 teaspoon of lemon juice. Taste and add another teaspoon only if needed.
Rest for flavor: Cover and chill for at least 30 minutes.
