Ingredients
  

  • Plain Greek yogurt (2 cups; whole milk for creaminess, or 2% for lighter texture)
  • Buddha’s hand (1 small to medium; you will use finely grated zest and some minced rind)
  • Honey or maple syrup (2–3 tablespoons, to taste)
  • Fresh lemon juice (1–2 teaspoons; optional, for a touch of tang since Buddha’s hand has no juice)
  • Pure vanilla extract (1/2 teaspoon; optional, adds warmth)
  • Pinch of fine sea salt (balances sweetness and brightens flavor)
  • Optional toppings: fresh berries, toasted pistachios or almonds, granola, chia seeds, drizzle of olive oil, or a little extra honey

Method
 

  1. Prep the Buddha’s hand: Wash and dry the fruit well. Using a microplane, finely grate about 1–2 teaspoons of zest from the outer yellow skin. Avoid over-grating the thicker white interior. For extra texture, finely mince 1–2 teaspoons of the tender white flesh from the “fingers.”
  2. Sweeten the yogurt: In a medium bowl, whisk the yogurt with honey or maple syrup until smooth. Add the pinch of salt and vanilla, if using.
  3. Add citrus aroma: Stir in the grated Buddha’s hand zest and the minced flesh. Start with 1 teaspoon zest, taste, and add more if you want a stronger aroma.
  4. Adjust acidity: If you prefer a brighter tang, whisk in 1 teaspoon of lemon juice. Taste and add another teaspoon only if needed.
  5. Rest for flavor: Cover and chill for at least 30 minutes. The citrus fragrance blooms as it sits.
  6. Serve: Spoon into bowls and top with berries, toasted nuts, granola, or a light drizzle of honey. For a savory twist, add olive oil, cracked black pepper, and a sprinkle of flaky salt.
