Ingredients
  

  • 1 cup plain Greek yogurt (or regular plain yogurt)
  • 2–3 tablespoons fresh calamansi juice (about 6–8 calamansi), to taste
  • 1–2 teaspoons calamansi zest (optional but recommended)
  • 1–2 tablespoons honey, maple syrup, or sugar, to taste
  • Pinch of sea salt
  • 1/2 teaspoon vanilla extract (optional)
  • Fresh fruit topping: sliced mango, pineapple, berries, or banana
  • Crunchy topping: granola, crushed graham crackers, toasted coconut, or chopped nuts
  • Optional garnish: mint leaves, extra zest

Method
 

  1. Prep the calamansi: Roll the calamansi on the counter to release the juices. Slice in half and squeeze through a small sieve to catch seeds.
  2. Mix the base: In a bowl, combine yogurt, calamansi juice, zest, sweetener, salt, and vanilla (if using). Stir until smooth and creamy.
  3. Taste and adjust: Add more juice for extra tang or more sweetener for balance. You want a bright citrus flavor that’s not mouth-puckering.
  4. Layer the cup: Spoon the yogurt into a glass or bowl. Add your fruit, then sprinkle granola or your crunch of choice.
  5. Finish and serve: Garnish with a pinch of zest or a mint leaf. Enjoy immediately for the best texture.
