Cauliflower Buffalo Bites - Crispy, Spicy, and Crowd-Pleasing

Ingredients
  

  • 1 large head of cauliflower, cut into bite-size florets
  • 3/4 cup all-purpose flour (or gluten-free all-purpose blend)
  • 2 tablespoons cornstarch (for extra crispness)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3/4 cup milk (dairy or unsweetened plant-based)
  • 2 tablespoons neutral oil (avocado or canola), plus more for the pan
  • 3/4 cup buffalo wing sauce (Frank’s or your favorite)
  • 1 tablespoon melted butter or vegan butter
  • 1 teaspoon honey or maple syrup (optional, to balance the heat)
  • Ranch or blue cheese dressing, for dipping
  • Celery and carrot sticks, for serving

Method
 

  1. Prep the oven: Preheat to 425°F (220°C). Line a large baking sheet with parchment and lightly oil it. This helps prevent sticking and encourages browning.
  2. Mix the coating: In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the milk and 1 tablespoon oil. Whisk until smooth and thick enough to cling to the florets.
  3. Coat the cauliflower: Add florets to the bowl. Toss well to coat every nook and cranny. Shake off excess batter and arrange them on the baking sheet with a little space between each piece.
  4. Bake until crisp: Bake for 20 minutes. Flip the florets, then bake another 10–12 minutes, until golden at the edges and lightly crisp.
  5. Make the buffalo glaze: In a small bowl, stir together buffalo sauce, melted butter, remaining 1 tablespoon oil, and honey or maple syrup if using. The butter rounds out the heat and helps the sauce cling.
  6. Sauce and finish: Remove the cauliflower from the oven. Brush or toss the florets with the buffalo glaze, coating evenly. Return to the oven for 7–10 minutes, until the sauce sets and looks glossy.
  7. Serve: Transfer to a platter. Add celery, carrots, and your favorite dip. Serve hot for the best texture.
