In a bowl, mix cream cheese, sour cream, garlic, onion powder, salt, pepper, and smoked paprika until smooth.
Fold in shredded chicken, cheddar, and green onions. Taste and adjust salt/pepper. If it's not addicting by the spoonful, add a pinch more salt.
Unroll the dough and separate into 8 triangles. Keep them cold so they're easier to handle.
Spoon about 2 heaping tablespoons of filling near the wide end of each triangle. Roll toward the point, tucking the sides to keep cheese from staging an escape.
Place rolls on the sheet, seam-side down. Brush tops with melted butter for that golden flex.
Bake 12–15 minutes until deep golden and the edges are crisp. If your oven runs hot, start checking at 11 minutes.
