Chicken Caesar Salad Wraps - A Fresh, Flavorful Lunch You Can Hold

Ingredients
  

  • Cooked chicken: About 2 1/2 to 3 cups, chopped or shredded. Rotisserie chicken is perfect.
  • Romaine lettuce: 4–5 cups, chopped into bite-size pieces. Iceberg works in a pinch.
  • Caesar dressing: 1/2 to 3/4 cup, depending on how saucy you like it. Use your favorite brand or homemade.
  • Parmesan cheese: 1/2 cup, freshly grated or shaved.
  • Croutons: 1 to 1 1/2 cups, lightly crushed so they mix well and stay put.
  • Tortillas or wraps: 4 large (10-inch) tortillas—flour or whole-wheat.
  • Lemon: 1/2 lemon for a squeeze of brightness (optional but recommended).
  • Black pepper: Freshly ground, to taste.
  • Olive oil or cooking spray: For toasting the wrap, optional.
  • Optional add-ins: Cooked bacon, sliced avocado, cherry tomatoes, red onion, or a pinch of red pepper flakes.

Method
 

  1. Prep the lettuce: Wash and dry romaine thoroughly. Excess water makes wraps soggy. Chop into bite-size pieces.
  2. Mix the salad base: In a large bowl, combine lettuce, chicken, and Parmesan. Add a few grinds of black pepper.
  3. Add dressing: Start with 1/2 cup Caesar dressing. Toss to coat. If it looks dry, add another tablespoon or two. You want it glossy, not drenched.
  4. Stir in croutons: Lightly crush them with your hands before adding. Gently toss so they keep some crunch.
  5. Add brightness: Squeeze in a little lemon juice. It lifts the flavors and balances the richness.
  6. Warm the tortillas: Heat each tortilla in a dry skillet for 10–15 seconds per side, or microwave covered with a damp paper towel for 20–25 seconds. Warm tortillas roll without tearing.
  7. Assemble the wraps: Lay a tortilla flat. Spoon a generous line of salad down the center, leaving space at the edges. Add optional extras like avocado or bacon now.
  8. Fold and roll: Fold in the sides, then roll tightly from the bottom up. If you’re packing it to go, wrap in parchment or foil.
  9. Optional toast: For a little crisp, lightly oil a skillet and toast the wrap seam-side down for 1–2 minutes per side until golden.
  10. Serve: Slice in half on the diagonal. Sprinkle with extra Parmesan or a crack of pepper if you like.
