Chicken Salad Lettuce Wraps - Fresh, Simple, and Satisfying

Ingredients
  

  • Cooked chicken: 3 cups, finely chopped or shredded (rotisserie or leftover roasted is great)
  • Celery: 2 ribs, finely diced
  • Red onion: 2–3 tablespoons, minced (or use green onions for a milder bite)
  • Apple: 1 small, diced (Honeycrisp or Gala for sweetness and crunch)
  • Grapes: 1 cup, halved (red or green), or use dried cranberries for a bolder flavor
  • Almonds or pecans: 1/3 cup, toasted and chopped
  • Fresh herbs: 2 tablespoons chopped dill, parsley, or a mix
  • Mayonnaise: 1/2 cup (use avocado mayo if you like)
  • Greek yogurt: 1/3 cup (adds creaminess with a tangy lift)
  • Dijon mustard: 2 teaspoons
  • Lemon juice: 1–2 tablespoons, to taste
  • Honey: 1–2 teaspoons (optional, balances acidity)
  • Salt and black pepper: To taste
  • Romaine hearts or butter lettuce: 12–16 large leaves, washed and dried
  • Optional extras: Chopped cucumber, sliced radishes, avocado, or a sprinkle of everything bagel seasoning

Method
 

  1. Prep the lettuce: Separate the leaves, rinse, and pat completely dry. Keep them chilled so they stay crisp.
  2. Make the dressing: In a large bowl, whisk mayonnaise, Greek yogurt, Dijon, lemon juice, and honey. Season with salt and pepper. Taste and adjust the lemon and salt.
  3. Build the salad: Add chicken, celery, red onion, apple, grapes, nuts, and herbs to the bowl. Fold gently until everything is coated but not smashed.
  4. Chill (optional): For the best flavor, cover and chill 20–30 minutes. The dressing settles and the flavors blend.
  5. Assemble the wraps: Spoon chicken salad into the base of each lettuce leaf. Don’t overfill. Add avocado or cucumber if using.
  6. Wrap and serve: Fold the sides of the leaf in, then roll from the base up, or simply serve taco-style. Top with extra herbs or a crack of black pepper.
  7. Make it a meal: Serve with sliced tomatoes, a cup of soup, or a side of fresh fruit for balance.
