Chocolate Chip Kodiak Cake Poppers

Servings: 3 servings

Ingredients

Base Ingredients
  • 1 1/3 cups Kodiak Cakes flapjack & waffle mix Buttermilk or Chocolate
  • 1/3 cup brown sugar lightly packed
  • 1 tsp baking powder
  • 1/4 tsp fine salt
  • 2 large eggs
  • 1/2 cup milk dairy or unsweetened almond/oat
  • 2 tbsp melted butter or neutral oil
  • 1 tsp vanilla extract
  • 1/2 to 3/4 cup mini chocolate chips
Texture tweaks (optional but clutch)
  • 2 tbsp Greek yogurt for extra moisture and softness
  • 1–2 tbsp maple syrup if you like a sweeter pop

Method

  1. Preheat to 350°F (175°C). Lightly grease your mini muffin pan.
  2. Kodiak mix, brown sugar, baking powder, salt.
  3. eggs, milk, melted butter/oil, vanilla (plus yogurt or maple if using).
  4. Combine wet into dry. Stir until just combined. Do not overmix or you'll lose the tender crumb.
  5. Fold in chocolate chips gently.
  6. Scoop batter to fill each mini well about 3/4 full.
  7. Bake 10–12 minutes, until the tops spring back and a toothpick comes out clean (melted chocolate doesn't count, FYI).
  8. Cool 5 minutes in pan, then transfer to a rack. Try not to inhale them all immediately. Try.
