Boil in well-salted water until al dente . Drain and rinse briefly under cool water to stop cooking. Shake off excess water.
Whisk lime zest, lime juice, olive oil, Greek yogurt or mayo, honey, garlic, cumin, salt, and pepper until creamy. Stir in jalapeño if using. Taste and adjust—this should be bright, tangy, and slightly salty.
Chop cilantro, onion, bell pepper, and avocado. Rinse beans. If using corn, char it in a hot skillet for 2–3 minutes with a touch of oil and salt for extra depth.
In a large bowl, combine pasta, beans, corn, bell pepper, and onion. Add half the dressing and mix to coat.
Fold in cilantro and avocado. Add remaining dressing until glossy and well coated.
Sprinkle with cotija or feta, extra cilantro, and a final squeeze of lime. Add chili powder or hot sauce if you want a kick.
Chill for 20–30 minutes to let flavors marry. Or eat immediately—no judgment.
