Coconut Date Energy Bites

Ingredients
  

  • 1 1/2 cups soft Medjool dates , pitted (about 12–14 dates). If dry, soak in warm water 10 minutes and pat dry.
  • 1 cup unsweetened shredded coconut , plus extra for rolling.
  • 3/4 cup raw nuts almonds, cashews, or walnuts all work
  • 2 tablespoons chia seeds or ground flaxseed
  • 1 teaspoon pure vanilla extract alcohol-free if you want it fully “no added sugar” strict
  • Pinch of fine sea salt to balance the sweetness.
  • Optional add-ins 1 tablespoon cocoa powder, 1/4 teaspoon cinnamon, or 2 tablespoons unsweetened nut butter for a richer bite.

Method
 

  1. If your dates are firm, soak in warm water for 10 minutes. Drain and pat very dry. Moisture is the enemy of structure.
  2. Add nuts to a food processor and pulse 6–8 times until finely chopped. Stop before it becomes nut butter (different recipe, different day).
  3. Toss in dates, shredded coconut, chia seeds, vanilla, salt, and any optional spices. Pulse until the mixture clumps and you can press it together. It should feel sticky but not wet.
  4. If too dry and crumbly, add 1–2 more dates. If too sticky, sprinkle in extra coconut or a spoon of oats until it firms up.
  5. Scoop 1 heaping tablespoon portions and roll into balls. Aim for 18–22 bites depending on size.
  6. Roll in additional shredded coconut for a pro finish and less stickiness on your fingers.
  7. Place on a parchment-lined plate and chill for 20–30 minutes to firm. Then try not to eat them all—no promises.
