Cornbread Energy Muffins

Ingredients
  

  • 1 cup Yellow cornmeal The soul of cornbread; provides texture and that familiar corn sweetness.
  • 3/4 cup All-purpose flour Adds structure so the muffins don't crumble like your willpower near the dessert table.
  • 1/2 tsp Baking powder (2 tsp) + baking soda The lift combo for a light, bouncy crumb.
  • 1 tsp Kosher salt Brightens everything; don't skimp.
  • 1/2 tsp Freshly ground black pepper Adds warmth and depth.
  • 1/2 tsp Ground sage (1 tsp) + dried thyme Classic stuffing aromatics for that Thanksgiving twist.
  • 3/4 cup Buttermilk Tenderizes and tangs; swap with milk + lemon if needed.
  • 1/2 cup Plain Greek yogurt Protein boost and moisture without heaviness.
  • 2 Large eggs Binds and lifts.
  • 1/3 cup Olive oil Keeps it moist and flavorful; melted butter works too.
  • 1–2 tbsp Honey Just enough to round out the savory; optional but recommended.
  • 3/4 cup Sharp cheddar, shredded Salty, melty goodness; boosts satiety.
  • 3/4 cup Cooked turkey sausage, finely chopped Lean protein and savory punch; chicken or plant-based sausage works.
  • Corn kernels 1/2 cup, fresh or frozen; Sweet pops of texture and color.
  • 1/2 cup Scallions, thinly sliced Fresh bite that cuts through richness.
  • 1/4 tsp Optional heat: red pepper flakes Just a whisper of kick.

Method
 

  1. Heat oven to 400°F (200°C). Line a 12-cup muffin tin with liners or grease well. For a golden crust, lightly oil each cup.
  2. In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, pepper, sage, and thyme. Whisk to evenly distribute leaveners and spices.
  3. In another bowl, whisk buttermilk, Greek yogurt, eggs, olive oil, and honey until smooth.
  4. Pour wet into dry. Stir just until a few flour streaks remain—no overmixing unless you enjoy bricks.
  5. Add cheddar, turkey sausage, corn, scallions, and red pepper flakes if using. Fold just to distribute.
  6. Divide batter evenly among cups, filling about 3/4 full. For extra cheesy tops, sprinkle a pinch of cheddar over each.
  7. Bake 14–18 minutes, until tops are golden and a toothpick comes out mostly clean (a touch of melted cheese is fine).
  8. Let rest in the pan 5 minutes, then transfer to a rack. They set as they cool, so resist the grab-and-burn instinct.
  9. Enjoy warm with a dab of butter, hot honey, or a swipe of cranberry relish for classic Thanksgiving vibes.
