  • Apple: 1 small to medium, crisp and sweet-tart (Honeycrisp, Pink Lady, or Fuji). Diced.
  • Ground cinnamon: 1/2 to 1 teaspoon, to taste.
  • Pure maple syrup or honey: 1 to 2 teaspoons for sweetness.
  • Vanilla extract: 1/4 teaspoon for warmth and depth.
  • Lemon juice: 1 teaspoon to brighten the apple and prevent browning.
  • Pinch of salt: Optional, but it makes the flavors pop.
  • Chopped nuts: 1 to 2 tablespoons (walnuts or pecans are great).
  • Granola or toasted oats: 2 to 3 tablespoons for crunch (optional).
  • Raisins or dried cranberries: 1 tablespoon for a little chew and sweetness (optional).
  • Nut butter: 1 teaspoon almond or peanut butter, drizzled (optional, but delicious).

Method
 

  1. Prep the apple: Core and dice the apple into small pieces. Toss with lemon juice and a pinch of cinnamon. This keeps it crisp and bright.
  2. Build the base: Add cottage cheese to a bowl. Stir in vanilla, the remaining cinnamon, and a small pinch of salt.
  3. Sweeten: Drizzle maple syrup or honey over the cottage cheese and stir gently to combine.
  4. Add the apple: Spoon the diced apple over the cottage cheese.
  5. Top it off: Sprinkle chopped nuts, granola, and dried fruit on top. Add a light drizzle of nut butter if you like.
  6. Taste and adjust: Add a little more cinnamon or sweetener if needed. Serve right away for the best crunch.
