Prep the durian. If using frozen durian, let it thaw until soft.
Remove any seeds, and check for fibrous bits. You want a smooth, creamy pulp.
Mash it gently. In a small bowl, mash the durian with a fork until mostly smooth. Don’t overwork it—keeping a little texture helps it feel natural in the yogurt.
Sweeten and brighten. Stir in the honey (start with 1 tablespoon), lime juice, vanilla, and a tiny pinch of salt.
Taste and adjust. You want a subtle sweetness and a light citrus note.
Combine with yogurt. In a separate bowl, add the yogurt. Fold in the durian mixture in stages, tasting after each addition.
For a mild version, use about half the durian mixture first, then add more as you like.
Adjust texture. If it’s too thick, stir in a splash of milk or coconut milk. Aim for a creamy, spoonable texture.
Chill briefly. Let the yogurt rest in the fridge for 15–30 minutes. This helps the flavors settle and softens the durian aroma.
Serve with toppings. Spoon into bowls and finish with your favorite toppings.
