Egg and Avocado Toast - Classic with Everything Bagel Seasoning

Ingredients
  

  • 2 slices of good-quality bread (sourdough, multigrain, or whole wheat)
  • 1 ripe avocado
  • 2 eggs (fried, poached, or soft-boiled)
  • 1–2 teaspoons everything bagel seasoning
  • 1–2 teaspoons fresh lemon or lime juice
  • 1 tablespoon olive oil or butter (for cooking eggs)
  • Salt and black pepper, to taste
  • Optional toppings: red pepper flakes, sliced cherry tomatoes, arugula, microgreens, pickled onions, or a drizzle of hot honey

Method
 

  1. Toast the bread: Toast your slices until they’re golden and crisp. Sturdier bread holds the toppings better.
  2. Prep the avocado: Halve, pit, and scoop the avocado into a bowl. Add lemon or lime juice, a pinch of salt, and a few cracks of pepper. Mash to your preferred texture—chunky or smooth.
  3. Cook the egg: Heat a nonstick pan over medium. Add olive oil or butter. Crack in the eggs and cook to your liking—sunny-side up with jammy yolks is a favorite. For poached eggs, simmer water with a splash of vinegar and cook each egg for about 3 minutes.
  4. Assemble: Spread the mashed avocado evenly over the toast. Top each slice with an egg.
  5. Season: Sprinkle everything bagel seasoning generously over the egg and avocado. Add extra salt and pepper if needed.
  6. Finish with toppings: Add any extras you like—red pepper flakes for heat, microgreens for freshness, or a few tomato slices for brightness.
  7. Serve immediately: Enjoy while the toast is crisp and the egg is warm.
