Make the dressing: In a large bowl, whisk together the Greek yogurt, lemon juice, Dijon, and honey.
Add a pinch of salt and black pepper. Taste and adjust the lemon and honey until the flavor is bright but balanced.
Add aromatics and herbs: Stir in the celery, red onion, dill or parsley, and garlic powder if using. This builds flavor before the chicken goes in.
Fold in the chicken: Add the shredded or chopped chicken and toss until evenly coated.
The mixture should be creamy but not soupy.
Customize: Mix in any optional add-ins you like. For sweetness, use grapes or cranberries. For crunch, go with almonds or seeds.
For brightness, add capers or pickles.
Taste and season: Add more salt, pepper, or lemon as needed. If it’s too tangy, a small drizzle of honey can smooth it out.
Chill (optional but recommended): Cover and chill for 20–30 minutes to let flavors meld. It will thicken slightly in the fridge.
