Hangry-Fix Energy Bites

Servings: 4 servings

Ingredients

  • 1 cup rolled oats old-fashioned; use gluten-free if needed
  • 10–12 soft Medjool dates , pitted about 1 packed cup
  • 1/2 cup natural nut butter almond, peanut, or cashew
  • 1/3 cup chopped nuts walnuts or almonds work great
  • 2 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 2–3 tbsp honey or maple syrup adjust to taste
  • 1/4 cup dark chocolate chips 70% cacao or higher
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of fine sea salt
  • Optional boosts 1 scoop unflavored or vanilla protein powder; 1–2 tbsp unsweetened shredded coconut; zest of 1 orange

Method

  1. If your dates are dry, soak them in warm water for 5 minutes, then drain well. Soft dates blend smoother and bind better.
  2. In a food processor, add oats and dates. Pulse until the mixture looks like coarse crumbs that start to clump.
  3. Spoon in nut butter, honey or maple, vanilla, cinnamon, and salt. Pulse until the mixture forms a sticky dough. If using protein powder, add now and pulse again.
  4. Add chopped nuts, flaxseed, chia, and chocolate chips. Pulse briefly to distribute without pulverizing everything. You want texture, not dust.
  5. If too dry, add 1–2 teaspoons of water or an extra drizzle of honey. If too sticky, pulse in 1–2 tablespoons more oats.
  6. Scoop tablespoon portions and roll into balls. For less mess, lightly oil your hands or chill the mixture for 10 minutes first.
  7. Place bites on a parchment-lined tray and chill for 20–30 minutes to firm up.
  8. Two bites make a solid pre-meeting or pre-workout snack. You're now officially hangry-resistant.
