If stiff, soak dates in warm water for 5 minutes, then drain well. Sticky is good; soggy is not.
In a food processor, add oats, protein powder, chia, flax, cinnamon, ginger, salt, and half the coconut. Pulse until sandy.
Toss in orange zest and vanilla. Pulse a couple of times to distribute.
Add dates and almond butter. Process until the mixture starts clumping. If it looks dusty, add 1 tbsp liquid at a time.
Pinch some mixture. If it holds shape without crumbling, you're golden. If crumbly, add another splash of liquid; if sticky, pulse in a tablespoon of oats.
Fold in dark chocolate chips by hand so they don't shatter into dust (unless you like confetti chocolate).
Scoop about 1 tablespoon per ball. Roll between your palms until smooth.

Chill for 20–30 minutes to firm up. This helps flavors marry and texture tighten.
