Hummus & Veggie Pita Pockets – Fresh, Fast, and Satisfying

Ingredients
  

  • Whole wheat pitas (2–4, depending on size), warmed
  • Hummus (about 1/2–3/4 cup), classic or flavored
  • Cucumber, thinly sliced or diced
  • Tomatoes (cherry or Roma), sliced
  • Red onion, very thinly sliced
  • Bell pepper, thinly sliced (any color)
  • Shredded carrots or matchsticks
  • Lettuce or baby spinach
  • Fresh herbs (parsley, mint, or dill), chopped
  • Olives (Kalamata or green), pitted and sliced (optional)
  • Feta cheese, crumbled (optional)
  • Avocado, sliced (optional for extra creaminess)
  • Lemon juice (1–2 teaspoons)
  • Extra-virgin olive oil (1–2 teaspoons)
  • Salt and black pepper, to taste
  • Spices (pinch of cumin, smoked paprika, or za’atar, optional)

Method
 

  1. Prep the veggies: Wash and slice the cucumber, tomatoes, onion, bell pepper, and carrots. Roughly chop the herbs. Keep everything bite-sized so it fits neatly in the pita.
  2. Season lightly: Toss the sliced veggies with a squeeze of lemon, a drizzle of olive oil, and a pinch of salt and pepper. Add a dash of cumin, smoked paprika, or za’atar if you like.
  3. Warm the pitas: Heat pitas in a dry skillet for 30–60 seconds per side or microwave for 10–15 seconds. Warm pitas are softer and less likely to tear.
  4. Split and spread: Cut each pita in half to form pockets. Spread a generous layer of hummus inside each pocket, coating the inner walls. This helps anchor the filling.
  5. Layer smart: Add a handful of lettuce or spinach first to create a base, then pile in cucumbers, peppers, carrots, tomatoes, and onion. Finish with olives, herbs, and feta or avocado if using.
  6. Finish and serve: Taste and adjust seasoning. If you want extra zip, add another splash of lemon or a sprinkle of za’atar on top. Serve immediately while the pita is warm.
