Prep the jackfruit: If using fresh jackfruit pods, remove seeds and any tough core.
Chop the flesh into small, pea-size pieces. If using canned jackfruit, make sure it’s the ripe kind (often labeled “in syrup” or “sweet”); if using jackfruit in brine, rinse well and taste—add extra sweetener to the yogurt if needed.
Stir the yogurt base: In a bowl, mix yogurt with 1–2 teaspoons honey or maple syrup, 1/2 teaspoon vanilla, a tiny pinch of salt, and a little lime zest if you like. Taste and adjust sweetness.
Add texture: Fold in 1–2 teaspoons chia seeds or shredded coconut.
This thickens the mixture and adds a pleasant bite.
Combine with jackfruit: Gently stir in the chopped jackfruit, reserving a few pieces for topping.
Portion the bites: Line a baking sheet with parchment or use silicone molds. Spoon tablespoon-size mounds of the yogurt mixture onto the sheet, or fill each mold about three-quarters full. Press a few extra jackfruit bits on top for looks and texture.
Freeze: Place the tray flat in the freezer for 2–3 hours, or until the bites are firm to the touch.
Optional chocolate finish: Melt dark chocolate in 15–20 second bursts in the microwave, stirring between bursts.
Drizzle over the frozen bites or dip half of each bite into the chocolate. Return to the freezer for 10 minutes to set.
Serve: Let the bites sit at room temperature for 2–3 minutes before eating to soften slightly. Enjoy straight from the freezer.
