Mangosteen Yogurt Parfait - A Bright, Tropical Breakfast

Ingredients
  

  • Fresh mangosteen (6–8 whole fruits, depending on size)
  • Plain or vanilla yogurt (Greek or regular; dairy-free works too)
  • Honey or maple syrup (optional, for sweetness)
  • Granola (choose a lightly sweet, crunchy style)
  • Toasted coconut flakes (unsweetened if possible)
  • Fresh lime (zest and a squeeze of juice)
  • Fresh mint (a few leaves for garnish)
  • Chia seeds or hemp hearts (optional, for added texture and nutrition)
  • Vanilla extract (optional, to stir into yogurt)
  • Pinch of salt (optional, to balance sweetness)

Method
 

  1. Prepare the yogurt. In a bowl, stir 2–3 cups of yogurt until smooth. If using plain yogurt, add 1–2 teaspoons honey or maple syrup, a few drops of vanilla, and a tiny pinch of salt. Taste and adjust. You want it lightly sweet and creamy.
  2. Open the mangosteen. Using a small paring knife, score the thick purple rind around the middle—just deep enough to cut the skin, not the fruit. Twist gently to open. Lift out the white segments with a spoon. Remove any large seeds if present.
  3. Slice or leave whole. If the segments are large, slice them into bite-sized pieces. Keep small segments whole for a prettier look in the glass.
  4. Add lime. Toss the mangosteen with a few drops of lime juice and a little lime zest. This brightens the flavor without overpowering it.
  5. Layer the parfait. In glasses or jars, add a spoonful of yogurt, followed by a layer of mangosteen, a sprinkle of granola, and a few coconut flakes. Repeat the layers until you reach the top.
  6. Finish with texture. Add a final spoon of yogurt, a generous sprinkle of granola, a pinch of chia or hemp seeds, and more coconut. Drizzle with honey if you like extra sweetness.
  7. Garnish. Add a few small mangosteen pieces, a bit of lime zest, and a mint leaf on top. Serve immediately for the best crunch.
