Mini Bagel Pizzas - A Fun, Fast, and Flavorful Snack

Ingredients
  

  • 6 mini bagels, split (12 halves)
  • 1 cup pizza sauce or marinara
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons grated Parmesan (optional, but adds flavor)
  • 1 teaspoon Italian seasoning or dried oregano
  • 1 tablespoon olive oil (optional, for brushing)
  • Salt and black pepper, to taste
  • Your choice of toppings, such as: Pepperoni slices or mini pepperoni
  • Diced bell peppers or onions
  • Sliced olives
  • Mushrooms, thinly sliced
  • Cooked sausage or crumbled bacon
  • Pineapple tidbits
  • Fresh basil or arugula (added after baking)

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment for easy cleanup.
  2. Prep the bagels. Split mini bagels and arrange them cut-side up. If you like a crispier base, lightly brush the cut sides with olive oil.
  3. Lightly toast (optional). For extra crunch, bake the plain bagel halves for 3–4 minutes before topping. This helps prevent soggy centers.
  4. Sauce them up. Spread 1–2 teaspoons of pizza sauce on each half. Don’t overdo it—too much sauce can make them soggy.
  5. Add cheese. Sprinkle mozzarella evenly, then dust with Parmesan and a pinch of Italian seasoning. Season with a little salt and pepper if your sauce is mild.
  6. Top your pizzas. Add pepperoni, veggies, or any toppings you like. Keep pieces small so they cook quickly and evenly.
  7. Bake. Place in the oven for 8–10 minutes, until the cheese is melted and bubbling and the bagel edges are golden.
  8. Finish and serve. Let them cool for 2 minutes. Add fresh basil or arugula if using. Serve warm.
