Ingredients
  

  • 1 ripe papaya (about 2 cups cubed or sliced)
  • 1 cup plain Greek yogurt (or regular yogurt for a looser bowl)
  • 1 lime (zest and juice)
  • 1–2 teaspoons honey or maple syrup (optional, to taste)
  • 1/2 teaspoon vanilla extract (optional, for warmth)
  • Pinch of salt (tiny pinch to sharpen flavors)
  • Toppings of choice: Toasted coconut flakes
  • Chopped pistachios, almonds, or cashews
  • Chia seeds or hemp hearts
  • Fresh mint leaves
  • Granola
  • A sprinkle of chili powder or Tajín for a spicy-sour kick

Method
 

  1. Prep the papaya: Slice the papaya lengthwise, scoop out the seeds, and peel. Cut into bite-size cubes or thin slices. Aim for ripe but firm fruit for the best texture.
  2. Mix the yogurt: In a bowl, combine yogurt with the lime zest, a squeeze of lime juice (start with 1 teaspoon), honey or maple if using, vanilla, and a tiny pinch of salt. Stir until smooth and creamy.
  3. Taste and adjust: Add more lime juice for brightness, more sweetener if your papaya isn’t very sweet, or another pinch of salt to make the flavors pop.
  4. Assemble the bowl: Spoon the lime yogurt into a shallow bowl. Nestle the papaya on top in a generous layer.
  5. Add texture: Scatter on your toppings. Toasted coconut, nuts, and seeds add crunch and richness. A few mint leaves make it extra fresh.
  6. Finish with flair: Drizzle a bit more honey if you like and dust with a pinch of chili powder or Tajín for a sweet-tangy-spicy finish.
  7. Serve right away: This is best fresh when the papaya is juicy and the toppings are crisp.
