Mix in mini chocolate chips and dried fruit. If the dough feels dry, add 1–2 teaspoons more honey. Too sticky? Sprinkle extra oats.
Pop the bowl in the fridge for 10 minutes. This makes rolling easier and reduces stickiness.
Scoop tablespoons of mixture and roll into 1–1.25-inch balls. Kid-sized, stroller-approved.
Roll in finely shredded coconut, crushed pretzels, or oat dust for a fun exterior and less sticking to fingers.
Place on a parchment-lined plate or container. Refrigerate for 30 minutes to firm up.
