Peanut Butter Banana Toast - With Granola Crunch

Ingredients
  

  • Bread: Sourdough, whole grain, multigrain, or gluten-free
  • Peanut butter: Creamy or crunchy; natural or lightly sweetened
  • Banana: Ripe but not mushy
  • Granola: Any style you like; aim for a nutty, crunchy blend
  • Honey or maple syrup: Optional for sweetness
  • Cinnamon: Optional for warmth
  • Flaky sea salt: Optional for contrast
  • Optional extras: Chia seeds, hemp hearts, cacao nibs, or a few dark chocolate chips

Method
 

  1. Toast the bread. Choose a sturdy slice and toast it until golden and crisp. You want a firm base that can handle toppings without getting soggy.
  2. Warm the peanut butter slightly. If your peanut butter is extra thick, microwave it for 10–15 seconds to make spreading easier. Stir to smooth it out.
  3. Spread generously. Cover the toast with a thick, even layer of peanut butter. Go edge to edge so the banana and granola have something to grip.
  4. Slice the banana. Cut into coins for classic coverage, or slice lengthwise for fewer, larger pieces. Keep slices about 1/4-inch thick so they don’t slide off.
  5. Arrange the banana. Lay the slices in a neat overlap to cover the toast. Press lightly so they stick to the peanut butter.
  6. Add the crunch. Sprinkle a handful of granola over the banana. Aim for even coverage and a mix of clusters for texture.
  7. Finish with accents. Drizzle a small amount of honey or maple syrup. Dust with cinnamon and a tiny pinch of flaky sea salt. Add chia, hemp hearts, or cacao nibs if desired.
  8. Serve right away. Enjoy while the toast is still crisp and the granola is crunchy.
