Ingredients

  • Bread: 1–2 slices of sturdy bread (sourdough, whole grain, multigrain, or your favorite).
  • Peanut butter: 2–3 tablespoons, creamy or crunchy. Natural peanut butter works especially well.
  • Banana: 1 ripe banana, sliced.
  • Honey: 1–2 teaspoons, to drizzle.
  • Cinnamon: A few pinches or up to 1/4 teaspoon.
  • Optional pinch of salt: If your peanut butter is unsalted, a tiny sprinkle sharpens the flavors.
  • Optional extras: Chia seeds, hemp seeds, crushed nuts, cacao nibs, or a light dusting of cocoa powder.

Method

  1. Toast the bread: Toast your slices until they’re golden and crisp at the edges. A sturdy toast gives you the best contrast with the soft toppings.
  2. Spread the peanut butter: While the toast is still warm, spread peanut butter edge to edge. The warmth helps it melt slightly and soak into the bread.
  3. Add the banana: Slice the banana into coins about 1/4 inch thick and layer them neatly over the peanut butter. Overlapping slightly keeps them from sliding off.
  4. Drizzle the honey: Use a spoon or honey dipper to zigzag a thin line of honey across the banana. A little goes a long way.
  5. Sprinkle the cinnamon: Dust evenly over the top. If using a lot, tap the jar lightly so you don’t end up with clumps.
  6. Season and finish: Add a tiny pinch of flaky salt if your peanut butter is unsalted. Sprinkle any extras like chia seeds or cacao nibs for crunch.
  7. Serve immediately: Enjoy while the toast is still warm and the peanut butter is soft.
