Persimmon Yogurt Pudding – A Light, Creamy Dessert With Natural Sweetness

Ingredients
  

  • Ripe persimmons (2–3 large, preferably Hachiya for a silky texture; Fuyu works if very soft)
  • Plain Greek yogurt (1 1/2 cups, full-fat or 2% for best texture)
  • Honey or maple syrup (1–3 tablespoons, to taste)
  • Vanilla extract (1 teaspoon)
  • Fresh lemon or orange juice (1–2 teaspoons)
  • Pinch of salt
  • Optional toppings: chopped pistachios or almonds, granola, pomegranate seeds, coconut flakes, or a drizzle of honey

Method
 

  1. Choose the right persimmons. For the creamiest pudding, use very ripe Hachiya persimmons—they should feel jelly-soft. If using Fuyu, wait until they’re extremely soft for the best texture.
  2. Prepare the fruit. Rinse, remove the leafy tops, and scoop out the flesh with a spoon. Discard any seeds or fibrous bits. You’ll need about 1 1/2 to 2 cups of pulp.
  3. Blend until silky. Add the persimmon pulp to a blender with Greek yogurt, honey or maple syrup, vanilla, citrus juice, and a pinch of salt. Blend until completely smooth and creamy.
  4. Taste and adjust. Check sweetness and tang. Add a little more honey if needed, or a squeeze more citrus to brighten the flavor.
  5. Chill to set. Pour the mixture into small jars, ramekins, or glasses. Cover and refrigerate for 2–4 hours to thicken and chill. The texture becomes pudding-like as it rests.
  6. Top and serve. Right before serving, add crunchy nuts, fresh fruit, or a light drizzle of honey. Serve cold.
