Prep the rambutan: Score the skin around the middle with a small knife and peel it off.
Split the fruit and remove the pit. Slice the flesh into bite-size pieces.
Sweeten the yogurt (optional): In a bowl, stir yogurt with a drizzle of honey or maple, a small pinch of salt, and a few drops of vanilla. Taste and adjust sweetness.
Add citrus brightness: Zest about 1/4 teaspoon lime or lemon directly into the yogurt, then add 1–2 teaspoons of juice.
Stir gently so the citrus lifts the flavor without thinning it too much.
Layer the cup: Spoon yogurt into a glass or jar. Add a layer of rambutan pieces. Repeat once more for a nice visual stack.
Top for crunch: Finish with granola, toasted coconut, or nuts.
A small handful is plenty for texture.
Garnish and serve: Add a few mint leaves and an extra drizzle of honey if you like. Serve right away for the best crunch.
