Prep your bowl. Grab a medium mixing bowl and a sturdy spatula or spoon. Line a plate or tray with parchment so the orbs don’t stick.
Combine dry ingredients. Add oats, ground flax or chia, coconut (if using), cinnamon, and a pinch of sea salt.
Stir to distribute everything evenly.
Add the wet ingredients. Spoon in the seed butter, honey or maple syrup, and vanilla. Use the spatula to fold the mixture together. It will look crumbly at first—keep mixing until it starts to hold.
Adjust texture. If the mixture is too dry to press, add 1 teaspoon of water or milk at a time, mixing after each addition.
If it’s too sticky, sprinkle in a little more oats or ground flax.
Fold in extras. Stir in chocolate chips or cacao nibs. Add them last so they don’t melt into the warm seed butter.
Chill briefly (optional). If the mixture feels soft, chill it for 10–15 minutes to make rolling easier.
Roll into orbs. Scoop about 1 heaping tablespoon per orb and roll between your palms. Aim for bite-size pieces, roughly 1–1.5 inches in diameter.
Coat (optional). For a clean finish, roll the orbs in shredded coconut, crushed pumpkin seeds, or cocoa powder.
Set and store. Place on the lined tray and chill for 20 minutes to firm up before transferring to a container.
