Heat the oven to 425°F (218°C). Line a large sheet pan with parchment for easy cleanup or lightly oil it.
Cut chicken into even 1/2-inch strips for quick, uniform cooking. Slice peppers and onions the same width so they char and soften in sync.
In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, red pepper flakes (if using), salt, and black pepper.
On the sheet pan, add chicken, peppers, and onions. Drizzle with olive oil, sprinkle the spice mix, and toss with your hands until everything's fully coated. Spread in a mostly single layer—less overlap = more char.
Bake for 15–18 minutes, stirring halfway. Chicken should hit an internal temp of 165°F and veggies should be tender with golden edges.
As soon as it comes out, add lime zest and juice. Toss again. The brightness is what makes it taste “restaurant good.”
Wrap in foil and heat in the oven for the last 5 minutes, or char quickly over a gas flame for that extra flex.
Pile into tortillas and top with cilantro and your favorite extras. Pro tip: a swipe of Greek yogurt + a few pickled jalapeños = elite.
