Spelt Zucchini Bread Bites - Soft, Nutty, and Perfectly Snackable

Ingredients
  

  • 1 1/2 cups finely grated zucchini (about 1 medium), well-drained
  • 1 3/4 cups (220 g) spelt flour (light or whole-grain; see notes in Variations)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 large eggs, at room temperature
  • 1/3 cup olive oil or melted coconut oil
  • 1/3 cup maple syrup or honey
  • 1/3 cup light brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt or unsweetened applesauce (adds moisture)
  • Optional mix-ins (choose up to 3/4 cup total): chopped walnuts, mini chocolate chips, raisins, or shredded coconut

Method
 

  1. Prep the pans: Heat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper cups. This recipe makes about 30–36 bites, depending on your tin.
  2. Drain the zucchini: Grate the zucchini and place it in a clean kitchen towel. Squeeze firmly over the sink until most of the liquid is out. You want it damp, not dripping.
  3. Mix dry ingredients: In a medium bowl, whisk spelt flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Break up any flour clumps so the batter stays even.
  4. Mix wet ingredients: In a large bowl, whisk eggs, oil, maple syrup, brown sugar, vanilla, and yogurt until smooth and slightly glossy.
  5. Combine: Add the dry ingredients to the wet. Stir gently with a spatula until you see the flour mostly disappear.
  6. Fold in zucchini and mix-ins: Add the drained zucchini and any optional mix-ins. Fold gently until evenly distributed. Do not overmix; it can make the bites tough.
  7. Fill the cups: Spoon the batter into the mini muffin wells, filling each about 3/4 full.
  8. Bake: Bake for 11–14 minutes, until the tops spring back when touched and a toothpick comes out with just a few moist crumbs.
  9. Cool: Let the bites rest in the tin for 5 minutes, then transfer to a rack to finish cooling. They’ll firm up as they cool.
