Prep the starfruit: Rinse well. Trim the ends and gently shave any brown edges along the ridges. Slice into 1/4-inch thick stars.
Pat dry with a paper towel so moisture doesn’t water down the yogurt.
Mix the yogurt base: In a bowl, stir yogurt until smooth. Add honey or maple syrup to taste, plus a splash of vanilla and a pinch of lemon or lime zest if you like. Keep it balanced—slightly sweet is best.
Set up your molds or tray: If using silicone star molds, place them on a small tray for stability.
If using a baking sheet, line it with parchment.
Layer the yogurt and fruit: For molds, spoon a thin layer of yogurt in each cavity, press a starfruit slice on top, then add a little more yogurt to just cover the edges. For a tray, spread a thin layer of yogurt (about 1/4 inch), arrange starfruit slices across the surface, and lightly press them in.
Add texture (optional): Sprinkle a small amount of toasted coconut, chia seeds, or finely chopped nuts. Use a light hand so the stars hold together when frozen.
Freeze until firm: Place the molds or tray in the freezer for 2–3 hours, or until completely set.
Shape the stars (if using a tray): Lift the slab using the parchment. Work quickly and use a small star cookie cutter to punch out shapes.
If the yogurt softens, pop it back in the freezer for 10 minutes and continue.
Finish and serve: Drizzle with a touch of honey or melted dark chocolate if desired. Serve immediately for the best texture, or return to the freezer for later.
