In a large mixing bowl, add oats, ground flaxseed, salt, and any dry add-ins like protein powder, coconut, or spices. Stir to combine.
In a separate bowl, whisk peanut butter, honey, and vanilla until smooth. If your nut butter is stiff, warm it 10–15 seconds in the microwave to loosen.
Pour the wet mixture over the dry ingredients. Use a sturdy spatula or clean hands to mix. If too crumbly, add milk 1 tablespoon at a time until it holds together when pressed.
Fold in chocolate chips and dried fruit. Keep the chips small for even distribution and better binding.
Pop the bowl in the fridge for 10–15 minutes. This firms the mixture and makes rolling easier (and less sticky—thank me later).
Scoop about 1 tablespoon of mixture and roll into 1-inch balls. You should get 18–22 bites depending on size and how generous your “taste testing” was.
Place bites on a parchment-lined tray. Refrigerate 30 minutes to set, then transfer to an airtight container.
