Prep the tangelo: Wash and dry. Use a microplane to zest about 1/2 teaspoon. Peel the tangelo and separate the segments.
If you like, cut segments into bite-size pieces. Squeeze any extra juice from the peels or leftover bits into a small bowl.
Sweeten the yogurt (optional): In a bowl, stir together 3/4 to 1 cup Greek yogurt, 1–2 teaspoons honey or maple syrup, and 1/4 teaspoon vanilla. Add a tiny pinch of salt to sharpen the flavors.
Add citrus flavor: Stir in the tangelo zest and 1–2 teaspoons of the tangelo juice.
Taste and adjust sweetness or citrus intensity as you like.
Layer the cup: Spoon half the yogurt into a serving cup or bowl. Scatter half the tangelo pieces over the top. Add a small sprinkle of granola or nuts.
Repeat the layers: Add the remaining yogurt, then the rest of the tangelo pieces.
Finish with more granola or nuts and a pinch of chia or hemp seeds if using.
Finish with spice (optional): Dust lightly with cinnamon or cardamom. If you want extra shine, drizzle a touch more honey on top.
Serve right away: Enjoy immediately for maximum crunch, or let it sit five minutes so the granola softens slightly in the citrusy yogurt.
