Travel-Friendly Thanksgiving Protein Bites

Ingredients
  

  • 1 1/2 cups rolled oats quick oats work too, for a smoother bite
  • 1 cup vanilla or unflavored whey or plant-based protein powder choose a brand you like; flavor impacts sweetness
  • 1/2 cup natural almond or peanut butter creamy, not the dry bottom-of-the-jar stuff
  • 1/3 cup pure maple syrup or honey, if you prefer
  • 1/3 cup dried cranberries reduced-sugar if possible, chopped
  • 1/3 cup chopped pecans lightly toasted for extra flavor, optional but recommended
  • 2 tablespoons chia seeds or ground flaxseed
  • 1/4 cup unsweetened shredded coconut optional for texture
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger adds that subtle “Thanksgiving” warmth
  • 1/4 teaspoon fine sea salt
  • 2–4 tablespoons milk or almond milk as needed for consistency
  • 1 teaspoon vanilla extract
  • Zest of 1 orange game-changer for cranberry-pecan flavor

Method
 

  1. In a large bowl, combine oats, protein powder, chia seeds, coconut, cinnamon, ginger, and salt. Stir to evenly distribute the dry ingredients.
  2. In a small microwave-safe bowl, gently warm the nut butter and maple syrup for 15–20 seconds until just fluid. Stir in vanilla and orange zest.
  3. Pour the warm mixture over the dry ingredients. Use a sturdy spatula to fold until mostly combined. Add 2 tablespoons of milk and keep mixing.
  4. If the mixture is crumbly, add milk 1 tablespoon at a time. You're aiming for a dough that holds when pressed but isn't sticky.
  5. Fold in chopped cranberries and pecans. Press a handful together—if it packs like a snowball, you're golden.
  6. Line a sheet pan with parchment. Scoop about 1 1/2 tablespoons per bite and roll into balls with slightly damp hands. You should get 18–22 bites.
  7. Chill in the fridge for 30–45 minutes to firm up. If you're in a rush, 15 minutes in the freezer works.
  8. For a subtle crunch, roll a few bites in finely chopped pecans or a dusting of cinnamon. Totally optional, totally extra.
