Turkey Trot Energy Bites

Ingredients
  

  • 1 1/2 cups old-fashioned rolled oats use certified gluten-free if needed
  • 10–12 soft Medjool dates, pitted about 1 packed cup
  • 1/2 cup creamy peanut butter or sunflower seed butter
  • 2–3 tablespoons honey or pure maple syrup
  • 1/4 cup mini chocolate chips regular or dairy-free
  • 2 tablespoons chia seeds or ground flaxseed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of fine sea salt
  • 2–4 teaspoons water or milk as needed for texture
  • Optional add-ins 2 tablespoons unsweetened shredded coconut, orange zest, or a scoop (2 tablespoons) vanilla protein powder designed for kids

Method
 

  1. If your dates are firm, soak them in warm water for 5 minutes, then drain well. Soft dates blend better and keep bites tender.
  2. In a food processor, add oats and dates. Pulse until the mixture looks like coarse crumbs with small flecks; don't overdo it—we want texture.
  3. Add peanut or seed butter, honey, vanilla, cinnamon, salt, and chia/flax. Pulse until the dough starts clumping. If it's dry or sandy, add water (or milk) 1 teaspoon at a time.
  4. Stir in chocolate chips and any optional add-ins by hand. This keeps chips from melting or pulverizing.
  5. Scoop about 1 tablespoon per bite and roll into 18–22 balls. If sticky, lightly wet your palms or chill the dough for 10 minutes first.
  6. Place on a parchment-lined tray and refrigerate for 20–30 minutes. They'll firm up and hold shape like champs.
  7. For kids 30–60 minutes pre-run, pack 1–2 bites. For longer runs or older kids, 2–3 bites is the sweet spot.
