Ugli Fruit Yogurt Parfait - Bright, Fresh, and Surprisingly Easy

Ingredients
  

  • 1 large ugli fruit (or 2 small), peeled and segmented
  • 1 1/2 cups plain Greek yogurt (whole milk for creaminess, or low-fat if preferred)
  • 2–3 teaspoons honey or maple syrup, plus more to taste
  • 1/2 teaspoon vanilla extract (optional, but adds warmth)
  • 1 cup granola or toasted oats (choose your favorite blend)
  • 2 tablespoons chopped nuts (pistachios, almonds, or walnuts)
  • 1 tablespoon unsweetened coconut flakes (optional)
  • Pinch of flaky sea salt (optional, for contrast)
  • Fresh mint leaves, for garnish (optional)
  • Zest of 1/2 ugli fruit or orange (optional, for extra citrus aroma)

Method
 

  1. Prep the ugli fruit: Slice off the top and bottom to create flat ends. Stand the fruit up and slice away the peel and pith. Separate into segments and remove any seeds. Cut segments into bite-size pieces.
  2. Sweeten the yogurt: In a bowl, stir together the yogurt, honey or maple syrup, and vanilla. Taste and adjust sweetness. If your yogurt is very thick, loosen it with a tablespoon of water or milk.
  3. Get your crunch ready: Combine granola with chopped nuts and coconut. If you like extra crunch, lightly toast the nuts and coconut in a dry skillet over low heat for 2–3 minutes until fragrant. Let cool.
  4. Layer the parfait: In two glasses or jars, add a spoonful of yogurt, followed by a layer of ugli fruit, then a layer of granola. Repeat until you reach the top, finishing with fruit and a sprinkle of granola.
  5. Add finishing touches: Grate a little citrus zest over the top. Add a pinch of flaky sea salt and a few mint leaves. Drizzle with a touch more honey if desired.
  6. Serve immediately: Enjoy right away for the best texture. The granola stays crunchy and the fruit tastes bright.
